Getting smaller

I did it!  Whenever I got around to reading my blogs that I follow, I sensed an overwhelming feeling of, "329 posts to read?  You've got to be kidding me!!"

Well, I thought today that I should treat my blogs like I do my books.  If I find myself forcing me to read a book, I put it down.  I applied that thinking to my list of blogs and whadaya know...I unsubscribe to over 50% of them!!!!

I went from 112 blog subscriptions to 43!!!  Can you imagine???  {Insert big sigh here.}


It's like when you go through FaceBook and delete all those "friends" that you don't need to read about all the time. :)  What a great feeling!! 

And this is just round one...I have a couple that I've giving a "maybe" to in hopes that the reason I subscribed in the first place comes back to me.  If not, round two will be a "bye-bye" for them. 

I'm hoping that this will motivate me to write more instead of read more.

Velcro Dog

So I didn't finish the 30 day picture thing. I've decided that instead of "following" a picture posting trend, I'll just make one up myself if needed. :)

I was going through my draft posts, I see that I have a TON of material to write on and should be writing instead of putting it off!!    I need to get crackin'!!

So I'm just going to post whatever I feel like. :)  Not only whatever, but whenever.  I want to start scheduling time, but we'll see about that.  Gotta start somewhere. 

So yea...

I can't get enough of this picture and it really show how much of a cuddle bug LeeLoo really is.  We call her "Velcro Dog", for when she lays with you, she makes sure that every part of her is touching you.  LOL  When she gets up, she literally peels herself off ya.

Too funny.  We love us some LeeLoo!!

A Friendly Reminder

I know for me, I tend to be really hard on myself.  This is something that I am working on everyday, but some days are better then others.  I really am trying to realize that I am fantastic!!!...just like everyone else sees me. 

Then I saw this in my inbox.  I have printed it out and have it at work on my board and will be bringing home one for the fridge.  :D

30 Day Picture Challenge Day 13: From a Distance

Our little pups love to go to the beach.  :D  As soon as we cross over the Coronado Bridge, LeeLoo doesn't stop whining...well, she doesn't want to stop, but she's such a good girl that she listens when Mommy & Daddy tell her to stop. 

Here she is running with Daddy, just as happy as can be.



All the while Sammy & I watch while enjoying the sun.  Or little there was that day...lol.

1 Year ago today...

One year ago today, I married my best friend.  He truly gets me for me and we make a great team.  I can't wait for our many years of growing together and having our own little family.  So far, just us and the two doggies.


It can only get better from here.

I love you my Steven!!!  Thank you for always encouraging me and being exactly what I need.  You mean more to me then you will ever know.  Thank you my sweet.  From here and to forever.

Remembering

9-11 was a couple of days ago, and I should have posted this then, but it's better late than never. 

My uncle posted on Facebook asking us where we were on 9-11, 10 years ago.  Here is what my response was.

"I remember my roommate at the time waking me up and telling me that the WTC had an airplane flown into it. At first I was confused and disoriented...I needed to fully wake up,plus I was in denial about it. 

I remember getting ready to go to school and being in a daze listening to different newscasts on the way.

I remember wondering if Sean, my half brother, was ok (he lived in NY at the time).  (He was ok,being out of the country.)

I remember being upset that my Child Development professor didn't want to talk about what happened. He just carried on like a normal day. Denial too, I suppose.

I remember my History professor asking us to share our feelings and what was going on in our heads. I couldn’t stop crying as I spoke about all the families who had just lost their loved ones.

I remember asking my mom, “Why did this have to happen on your birthday?”  Her response??  “I’m just relieved it didn’t happen on yours.”

I remember thinking in the days that followed that acts like these happen in other countries every day. I remember thinking that I am happy to be living in America.  I remember being proud to be an American.

It’s hard to believe that it was almost 10 years ago…andthat I was 20 years old.  It made me realize that people deal with grief in different ways.  Not right or wrong, but different.

I still think of all the families who lost their loved ones that day.  And those who lost loved ones in the days, months, and years to follow due to injuries and such.  I still think of them, quite often actually.  Especially on anniversaries…itbreaks my heart.  9-11-2001…We will never forget."

30 Day Picture Challenge Day 10: Something I made

Alright, alright...I know I promised more posts, but I have let life take over and haven't been on the computer much.  Here's an effort to post more. :)


For our wedding receiption, my Auntie Mer was so kind in hosting it at her house.  The table decorations had some of these rocks with insirational words written on them.  She also made me a couple of different hair flowers to pick from.  This picture below represents my favorite of them.  I didn't want to keep everything, as we have minimal tendicies, but I wanted to display what I loved the most.



I chose 'fly' because when I am with Steven, I am flying.  He supports me in the decisions I make and really encourages me to be me.  I love him most for that.

30 Day Picture Challenge Day 8: Technology

My favorite technology at the moment is Skype.  I know it's not new, but it's new to me. 

My sweet husband of mine set me up an account with Skype the day before my birthday so I could "talk" with my brother.  All we did really was make faces at each other and laugh for about an hour and a half.  My little brother ended up coming over to Mike's and all three of us were in on it.

30 Day Picture Challenge Day 7: Something New

We finally did it! 

Since my husband and I moved in with each other (April 2010), we haven't hung up his vinyl that he had up at his old place. (Where we are now is our second place together.)  Well folks...it's finally been done!  We have some others that we will be hanging on a different wall, but we need to get more frames first.  For now, we have a NEW wall in our living room above our white sofa.

30 Day Picture Challenge Day 6: Childhood Memory

Okok...I will admit that I've kinda put this one off...a Childhood Memory.  How do I pick only one?  Soooooooooooo hard as there are many worth talking about...hence the stalling. 

Growing up, the one thing that I can remember both parents (divorced when Mike and I were 5 yrs old) being supportive of was to give ourselves permission to be silly. (Thank you!!)  This is one that we all still hold true today. 

So with that said, I say this to my brothers that it is NOT our fault that we can't seem to take a picture together where we are all smiling/"looking nice".  Well, I know they exist, it's just not as fun.  ;)

30 Day Picture Challenge Day 5: Someone you love

Day 5 is supposed to be a picture of someone you love.  I was going to post the obvious and put a picture of my husband, but then I thought, doesn't everyone post their spouse?  I dunno.  I said to myself..."it's gotta be someone who is beyond family".   I'll try to make this short and sweet.

Brandy (aka Sissy) currently lives 1,366 miles away in the big state of Texas.  She moved there shortly after I move to San Diego in 2000...I wish I would see her more often.  

Last October, when I called her with two week's notice of my wedding, she booked a flight and said that she wouldn't miss it for the world. 

Here is the last picture we took together. This was the night after our wedding. We went out, just the two of us. I just absolutely love being around her. :) She sure does love me. :)




She's due to have her baby boy in early September and I will be making my first trip out to Texas (looooong overdue, yes I know) to visit and help out where I can.  I hope that it wont be TOO hot...she swears that my hair will get used to the humidity...lol.  Yea, right.  ;)

I love my Sissy with everything that I have and wish that we lived closer to each other so we could share the day to day.  We can't always get what we wish for, but I am thankful everyday for having her in my life.  She has impacted me in a way that is beyond words... 

I would be a different person if I hadn't met her, so long ago.  Even though I know she would have eventually showed up.

I love you more Sissy...FINE PRINT!!! ;)

30 Day Picture Challenge Day 4: Favorite Color

Favorite color...hmmmmmm.  Okok...I will admit it.  My favorite color is pink!

I never thought I'd like pink...EVER.  I always stayed as far away from pink as possible.  During high school and just after, I hated pink.  Didn't want anything to to with it!  Looking back on it now, I can see it was because I was afraid of embracing my femininity.  

Well thank goodness that's over with!  I have embraced it in full force! :D  Here are some of my favorite things pink...

30 Day Picture Challenge: Day 3: Clouds

Alright...Couple days late, but that's ok.  It was quite the weekend (will post all about that later).  YAY!

Anyway.  On my way to my Mother-in-law's to purge the day away, I liked how there was a grey sheet of clouds, except for in one spot.  If the sun was up, it would have been streaming down to the ground below.

Camera

I left my camera in my car and am currently too tired to go and get it for my 30 day Challenge Day 3: Clouds.  I helped my mother in law reorganize her apartment from 6:15a-8:30pm.  Just have the bedroom to do!  YAY!  Very tired.  ;)

30 Day Picture Challenge Day 2: What I wore

So when I read this morning that Day#2 is a pic of what I'm wearing, I thought, "Oh great"...lol.  I didn't get to get a full body pic for what I wore to work, but here are the parts of it. :)

I love the detail in this top...dunno if you can tell, but there's a thick strip of lace running down the front of it.  The best part, it was $5 at Target, of all places.  Love love!  The jacket is mostly always needed with the AC blaring in my office.  Good times, good times.  It's from White House Black Market.  One of the only shops I still actually shop at.



I wore them with my Jeggings (rolled up to look like stove pipes) and shoes that I wore on my wedding day and haven't worn since.  Super Sassy!!


FUNFUNFUN!!  :D

After watching Strictly Ballroom, we went out for Pho and our favorite Froyo place Fiji Yogurt.  What makes it even better, they have dairy free!  WOO HOO!  I <3 Fiji Yogurt!

Anyway...here's what I wore to date night.  Same pants as earlier, just threw on Mickey, flips and my converse hoodie.


I figure I will spare you what I wore to the gym.  ;)

30 Day Picture Challenge: Day 1: Self Portrait

Alight...I'm getting on the band wagon of these "30 Day Picture Challenges".  I'm hoping that it will help me create the habit of posting at least something on my blog everyday...or at least every other day. :)  We will see!!!

Day #1: Self Portrait

I'm actually looking over at my husband here...lol.  Most pictures of me look the same.  Big smile, on with the camera, head tilted slightly to the left or right.  Classic Wallie pic...believe me...ask anyone I know...lol.  I wanted something different for my "Self Portrait".

I like this pic cuz it's how I am...a little off.  Yea...cuz I'm perfectly normal.  ;)

What a Whirlwind!

What a birthday weekend full of surprises!!  :D

We started by spending my special day at Disneyland!!!  WOO HOO!!  Steven arranged for LeeLoo to stay with her best friend Kahlua and his Grandma volunteered to take Sam, so we didn't have to worry about our furry ones.  We cashed in our Honeymoon and got our yearly passes!!  365 days of Disney with no black out dates!!  YAY!

We have decided to  focus on one land each visit, to know and appreciate all of the creativeness that went into building it.  I can't wait to get started!!!  Too bad we are about an hour away.  If we were closer, I'd want to go after work, just to get a ride in...lol.  I'm sure Steven is grateful for that!  :D

We finally got home and man, we were beat!  Woke up the next morning and got up sooner than I should have.  This was the reason I was forced later to take a nap...oh darn.

Every Friday (mostly) we go to eat at our favorite restaurant Pho Fifth Avenue.  I was in the mood for Pho, but knew that Suzanne would be in town around dinnertime and that she wasn't a huge fan of Vietnamese Food.  I told Steven that I decided to pull the "it's my birthday card"  and that's where we were going to go.


Suzanne was coming down from Santa Cruz to bring some of my Grandma Patrick's furniture (vanity set and rocking chair) for us to have here.  I wasn't sure if she was going to bring anything else on this trip, but you never know.  When Suz pulled up, I said to park by the elevator so we could unload the furniture.  Since the bed of her truck is covered, I didn't know if she had anything else for me.  As we got out of the truck, she said, "You have to see what I brought you..."

She pulled down the tailgate and my eyes instantly were drawn to the left side to a dark figure.  I focused closer and:

OUT POPPED MY TWIN BROTHER!!!!!!!!!

I SCREAMED and started jumping up and down with excitement!!  I couldn't believe he was here!  I kept begging him to come down to visit, especially since I don't like spending our birthday apart,but he said that he just couldn't make it this time.  I wrapped my arms around him and squeezed him tight as I started sobbing into his chest.  Then Steven came down and was just as surprised as I was!!  He thought the screaming had come from the community's pool...lol.  Nope, it was me...heh heh heh.


So off to dinner we go, me stuck in LaLa Land and enjoying being with part of my NorCal family.  As we are walking up to the restaurant, I saw balloons.  I turn to Steven and said, "someone else is having a birthday...and they are sitting at our table...oh wait...I KNOW THOSE PEOPLE!!"  They had set it up for ME!!!  A surprise birthday dinner for little ol' me!!!  I couldn't believe it!  Surrounded by even more people I love!!  If I would have known, I would have brought my camera (Steven forgot).  Find out we were about 30 minutes late, but they couldn't blame that on me!!!  I then figured out why Steven had asked me if I wanted to do my hair all cute and such.  I wanted to be casual...thank goodness I at least put on makeup!  I was just happy to be able to share it with Mike.  Even thinking about it now brings tears to my eyes.

Saturday we just hung out with Suz and Mike, watch some movies (very interesting) and caught up a little bit.  BBQ at The Woodruff's Saturday night with a Gluten-Free/Dairy-Free cake, just so I could participate in the eating of it.  Sunday breakfast  at Suz's favorite spot and wished them farewell on their journey back home to the Bay Area.

All in all, I had a FANTASTIC birthday!!!  Not a bad way to start my 30s.  Not bad at all.

I'm 30!!!

I'm 30 today!!  Today is the day I've been looking forward to for quite some time.  I'll post more when I get back...because today, we're going to...


You guest right folks!!  We're going to Disneyland!!!  :D  What a great birthday surprise!!!!  :D  It's Steven and my first time going together...hard to believe, I know.  I can't wait!!!!!!

Arugula: Part II

Alright!!!  Here is recipe #2 for our Arugula adventure.  :)  This recipe was, again, in my Glorious Greens book.  Buy the book HERE!!!  Pics are mine, of course. ;)


Arugula, Cheese, and Tomato Quesadilla

(These were Steven's favorite out of the Arugula dishes. :D)

Now~ since I'm allergic to wheat and dairy, I used corn tortillas and rice cheddar cheese from my local market. Didn't use the Canola Oil, chili powder or cumin either, but whatever works for you!! YUM!!




Serve as a quick lunchtime treat or as a part appetizer.  This is adapted from a basic quesadilla recipe made by Katie Le Lievre, a Boston caterer.

Makes 36 Wedges

2 Cups washed and roughly chopped arugula leaves, tough stems trimmed

2 Cups shredded cheese

1 Cup chopped tomatoes

1/2 Cup chopped scallions

1 can mild green chilies, chopped

1 tsp chili powder

1 tsp cumin

12 fresh flour tortillas

Canola Oil


1)  In a large bowl, combine arugula, cheese, tomatoes, scallions, chilies, chili powder, and cumin.  Place 1/2 cup of the filling between 2 tortillas.



 
2)  In a large frying pan, heat 1 tsp canola oil over high heat.  Cook quesadilla until the cheese is melted and both sides are crisp.  Repeat procedure, keeping cooked quesadillas in a warms over, until all quesadillas are cooked.  Slice each into 6 wedges and serve immediately.


**Instead of frying, you can bake quesadillas in a preheated 375 deg F oven until crisp, which allows you to cook several at a time.


These were so delish and I plan on making them again and again (and again)!  Easy peasy!!

Arugula: Part I

I found my camera and finally have downloaded the pics.  I know you've been waiting for this...our first adventure with Arugula!!  YUM!!

I always wished that I could look into the fridge, see the hodgepodge of ingredients, and come up with dinner. My husband has that talent, but I do not. I'm getting better, but yea...not so much...lol.  I'm all about the cookbooks. 

This is what I see when I open the fridge (most of the time anyway):



In our first group session with our Holistic Health Coach, we talked about vegetables.  More specifically, Glorious Greens!!  My other two female session mates and I pretty much have eaten/tried the same greens.  My first "action" goal was to come up with 3 new recipes over the next couple of weeks using new greens that I haven't used before.  I knew I had eaten some kind of Arugula salad in the past and decided to start with that one.

Our first resource was the recipe book "Greens Glorious Greens!" by Johnna Albi & Catherine Walthers.  Not only do they have great recipes in here, they also talk about each type of green and its benefits.  Super fantastic!!  Check out the book HERE!

This recipe stood out to me right away!  YUM!




To quote the recipe book:

Potato Salad with Arugula

In this recipe, arugula is used more as an herb than a lettuce.  The pungent flavor is distinct, but nicely balanced by the smoothness of the potatoes, the lushness of the olive oil, and the tang of the tomatoes.  Great for picnics and BBQs.

Serves 6 to 8

2 lbs small red potatoes
1/2 cup very thinly sliced red onion
2 large tomatoes, cut into .5-in wide wedges
1 cup chopped arugula leaves, washed and though stems trimmed

Dressing:
3 TBLS white wine vinegar
6 TBLS extra virgin olive oil
1/2 tsp Dry Mustard
Salt and freshly ground black pepper to taste

1)  Scrub potatoes well.  Steam over boiling water until tender when pierced with the tip of a sharp knife, 15-20 in

2)  Cool potatoes slightly under running water to allow easy handling.  Peel potatoes (I like to keep the skin on) and cut in half lengthwise.  Cut each half into 3 pieces.  You should have about 5 cups of 1-in chunks.  Place in a large mixing bowl.

3)  When potatoes have cooled to room temperature, add the red onion, tomatoes, and arugula.  Toss gently to combine.

4)  In a small jar, combine the vinegar, olive oil, mustard powder, and S&P.  Pour over the vegetables and toss gently to incorporate dressing.  Taste and adjust seasonings.


There you have it!!  I cut up some fresh strawberries:




I baked a couple of chicken breasts, using a basting brush to apply the mustard/EVOO that I mixed up (marinating the chicken in the dressing for the potato salad would have been a great idea too).  Add salt & pepper...viola!  We have dinner folks!!  :D



It was so easy and took practically no time to prep (minus the boiling of the potatoes, but multitasking is always a good idea!).
